The Ultimate VEGAN Chocolate Chip Cookies


I’m going to start by confessing “I am not vegan.” I used to think vegans are sacrificing flavor for healthy eating. Boy was I totally wrong! It truly comes down to picking out and having access to great ingredients. Honestly vegan dishes typically require few ingredients however these handful of items must be high quality. In my opinion- that is what makes a successful vegan dish.
This recipe used to be a secret I kept. It’s just too good to share! Then I realized it is better to share this recipe to spread the habit of healthy choices. So here it is- the best vegan chocolate chip cookie recipe.

Ingredients:
- 1 tablespoon golden flaxseed
- 2 tablespoons water
Let sit for 10 minutes. The flaxseed will rise and absorb all the water.
- 1 1/8 cups of all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Mix the above dry ingredients in one bowl. Set aside.
- 1 stick vegan butter – for this recipe I used cashew butter from Whole Foods
- 1/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 cup vegan chocolate chips (also from Whole Foods)
Preheat oven at 350F.
Using a spatula mix the softened to room temperature vegan butter with the sugars. Add vanilla extract and the flaxseed mixture. Mix well.
Add into the same bowl the flour mixture. Incorporate well. Once fully incorporated add in 1 cup of vegan chocolate chips.
Form balls using a scooper or a measuring spoon unto a baking sheet layered with parchment paper.
Bake in preheated oven anywhere from 10-12 minutes. All ovens warm up differently so keep a close eye. Less time means softer cookies and longer baking time lends to crispier ones.
